| Description: | OBJECTIVES: The course aims to teach participants the traditional Portuguese cuisine with a solid approach to the main contents. The course is divided into 10 modules (12 hours each) consisting of theoretical (40 hours) and practical classes (80 hours). Chef Cordeiro intends to honour the essence of knowledge on Portuguese gastronomy and the responsibilities in the kitchen. OPERATION MODE: Duration: 120 hours Start: March, 2021 Application Deadline: October 22, 2020 (1st phase) Number of openings: 20 Schedule: Wednesday: 18H00 to 22H00 / Saturday: 09H00 to 13H00 RECEIVERS: The course is for anyone who has an interest in learning and improving the practices of Portuguese cuisine. CURRICULAR STRUCTURE: Module 1 - BROTHS Module 2 - BASIC CUTTING OF GENERAL VEGETABLES Module 3 - RICE Module 4 - PASTAS Module 5 - FISH Module 6 - MEAT Module 7 - NATIONAL/INTERNATIONAL SAUSAGES Module 8 - SEAFOOD AND BIVALVE MOLLUSCS FROM THE PORTUGUESE COAST Module 9 - PORTUGUESE CODFISH. TECHNIQUES AND SECRETS Module 10 - SWEETS AND DESSERTS DURING THE COURSE THE FOLLOWING ACTIVITIES WILL BE CARRIED OUT: - 2 lunches on a Saturday (the symbolic amount paid by the participants will revert to charity) - 2 dinners on a Wednesday (Public entities and personalities) - 1 visit to Matosinhos market (at dawn) - 1 visit to a wholesale commercial establishment (Makro / Recheio and / or El Corte Inglés) P.S. All dishes will be prepared by the participants / trainees under the supervision of the team (Chef Cordeiro and assistants).
